dc.description.abstractSeven strains were identified by API gallery and molecular identification by PCR and MALDI-TOF MS. By eliminating the effect of pH, H2O2 from the antimicrobial factors and using proteolytic enzymes, the inhibiting agent was determined as a substance of proteinous nature. Optimizing the production of these substances by treating the supernatant by the Tween 80, which increased the inhibitory activity but it was affected by adding the urea. Growth kinetics in mixed culture clearly showed that L. innocua and L. ivanovii are sensitive to our isolates. These strains of Ln. mesenteroides have remarkable probiotics profiles, be able to survive at pH 2.0 and in the presence of bile salts and pepsin. These strains do not have evaluated a bile salt hydrolase or hemolytic activity, but they showed good resistance to antimicrobial agents clinically relevant.
